PERSONAL TASTING NOTES

A textured volcanic white with citrus, yellow fruit and subtle herbal notes. Fresh and savoury, with bright acidity, gentle grip and a salty mineral finish.

VINIFICATION METHOD

The grapes are hand-harvested at the end of September, then destemmed and crushed. Spontaneous fermentation takes place in neutral epoxy tanks, with different skin-contact times depending on the grape: 2 days for Carricante, 5 days for Catarratto and 10 days for the remaining varieties. The wine is pressed at the end of fermentation. No clarification, filtration or correction is carried out, and a small amount of SO₂ is added before bottling.

CONTROCORRENTE

Controcorrente is a small Etna project created by Antonino “Nino” Calì on family land near Linguaglossa. The name translates as “against the current” and reflects Nino’s independent way of working, with each wine approached on its own terms rather than through a fixed recipe.

Production remains small and personal, with the range showing several sides of Etna through sparkling, skin-contact and red wines. The common thread is a direct, energetic style shaped by local grapes and the volcanic landscape.
