WINES BY LA CAVE AUX FIOLES

THE STORY

La Cave aux Fioles is the Roussillon project of Carlos Badia, based near Espira-de-l’Agly, north of Perpignan. After around thirty years working in the wine world, Carlos began making his own wines in 2016 and officially launched the domaine in 2019.

The playful names and labels reflect his personality, while the wines themselves follow a direct, personal vision of Roussillon.

THE VINEYARDS

Many of the vineyards are planted with old vines rooted in clay and limestone soils. Carlos works with a broad mix of Mediterranean varieties, including Grenache Blanc, Grenache Gris, Grenache Noir, Macabeu, Muscat, Carignan, Lledoner Pelut, Cinsault, Syrah, Mourvèdre and Malvoisie.

This diversity gives him plenty of freedom to move between white, red, rosé and skin-contact wines while exploring different expressions of the Roussillon landscape.

IN THE CELLAR

Fermentations begin spontaneously, and since 2022 the wines have been made without cellar additions. Maceration and ageing are adapted to each cuvée, ranging from direct-pressed whites to lightly extracted reds and wines with longer skin contact.

The cellar work remains simple and artisanal, but the personality is anything but serious. Names such as Départ en Vacances, Nuit Blanche and Nobody’s Fault but Wine reflect Carlos’s playful side, while the wines themselves remain focused, energetic and rooted in Roussillon.
