PERSONAL TASTING NOTES

Juicy and lifted, with cherry, raspberry, wild strawberry and redcurrant. Fresh and fluid on the palate, with subtle floral and earthy notes, a delicate savoury edge and a clean, vibrant finish.

VINIFICATION METHOD

100% Pinot Noir from vines planted in the late 1980s on the plains of Corpeau, on clay-loam soils with iron oxides. The wine is made with 70% destemmed grapes in open truncated-cone wooden vats, without temperature control. It undergoes 20 days of maceration, with one hour of punch-downs per day during the second half of maceration. After pressing, alcoholic fermentation is completed in barrel, followed by 10 months of ageing before bottling.

MEET THE WINEMAKER

DOMAINE DERAIN

Domaine Derain was founded by Dominique Derain and his wife Catherine in Saint-Aubin in 1988, after Dominique trained in winemaking around Burgundy. The estate became one of the early references for low-intervention and biodynamic viticulture in the region, working around 5.5 to 6 hectares in and around Saint-Aubin. 

Julien Altaber first joined Dominique in the early 2000s and gradually became his close assistant and friend. Carole Schwab joined the domaine in 2006. When Dominique stepped back from the estate, Julien and Carole became the natural successors and took responsibility for the vineyards and wines.
