PERSONAL TASTING NOTES

Tense and mineral, with citrus, green apple and a subtle smoky reduction. The palate has a texture like rich olive oil, smooth and coating but still precise, with bright acidity, chalky minerality and a long, saline finish.

VINIFICATION METHOD

100% Chardonnay from around 40-year-old vines on a steep south-east-facing slope in Saint-Aubin, on white clay-limestone and limestone soils. The grapes are foot-trodden and directly pressed, then the juice settles for a couple of days before spontaneous fermentation. The wine is aged for 14 months on the lees in older barrels, at least 5 years old, with one racking after about a month. It is unfined and only lightly filtered with diatomaceous earth, with 10–20 mg/L SO₂ added at blending.

MEET THE WINEMAKER

DOMAINE DERAIN

Domaine Derain was founded by Dominique Derain and his wife Catherine in Saint-Aubin in 1988, after Dominique trained in winemaking around Burgundy. The estate became one of the early references for low-intervention and biodynamic viticulture in the region, working around 5.5 to 6 hectares in and around Saint-Aubin. 

Julien Altaber first joined Dominique in the early 2000s and gradually became his close assistant and friend. Carole Schwab joined the domaine in 2006. When Dominique stepped back from the estate, Julien and Carole became the natural successors and took responsibility for the vineyards and wines.
