PERSONAL TASTING NOTES

Fresh and expressive, with red cherry, raspberry and earthy notes. Light on its feet but structured, with lively acidity, a subtle savoury character and a clean, elegant finish.

VINIFICATION METHOD

100% Pinot Noir from Saint-Aubin 1er Cru “Le Puits”, on clay-limestone soils. The grapes are hand-harvested and vinified using a mix of destemmed and whole-cluster fruit, with a short maceration. Fermentation takes place in stainless steel, fiberglass or concrete depending on the vintage, followed by ageing in old oak. The wine is unfined and unfiltered, with minimal SO₂ added only when necessary.

MEET THE WINEMAKER

DOMAINE DERAIN

Domaine Derain was founded by Dominique Derain and his wife Catherine in Saint-Aubin in 1988, after Dominique trained in winemaking around Burgundy. The estate became one of the early references for low-intervention and biodynamic viticulture in the region, working around 5.5 to 6 hectares in and around Saint-Aubin.

Julien Altaber first joined Dominique in the early 2000s and gradually became his close assistant and friend. Carole Schwab joined the domaine in 2006. When Dominique stepped back from the estate, Julien and Carole became the natural successors and took responsibility for the vineyards and wines.
