PERSONAL TASTING NOTES

Rich and balanced, with ripe dark fruit, liquorice and black olive. The finish is smooth and savoury, with a fresh lift and a silky texture. Can be served slightly chilled.

VINIFICATION METHOD

Made from 50% Grenache Noir, 30% Syrah and 20% Cinsault from vineyards around Espira-de-l’Agly and the foothills of the Catalan Corbières, on clay and silty soils over a karstic plateau. The Syrah is destemmed on arrival, while Grenache and Cinsault macerate as whole bunches until pressing. The wine undergoes around one week of maceration under juice, followed by pressing, controlled-temperature fermentation and ageing in stainless steel. Bottled in April.

MEET THE WINEMAKER

LA CAVE AUX FIOLES

La Cave aux Fioles is the Roussillon project of Carlos Badia, based near Espira-de-l’Agly, north of Perpignan. After around thirty years working in the wine world, Carlos began making his own wines in 2016 and officially launched the domaine in 2019.

The playful names and labels reflect his personality, while the wines themselves follow a direct, personal vision of Roussillon.
