PERSONAL TASTING NOTES

Intense and bittersweet, with candied citrus, ginger and a mix of herbal bitterness. The finish turns savoury and aromatic, with notes of bread crumb and wild garrigue herbs.

VINIFICATION METHOD

A white wine base macerated with wild garrigue herbs, spices and citrus, together with eau-de-vie and sweet wine. The aromatic plants are gathered around the vineyards. It is produced once a year and is non-vintage.

MEET THE WINEMAKER

LA CAVE AUX FIOLES

La Cave aux Fioles is the Roussillon project of Carlos Badia, based near Espira-de-l’Agly, north of Perpignan. After around thirty years working in the wine world, Carlos began making his own wines in 2016 and officially launched the domaine in 2019.

The playful names and labels reflect his personality, while the wines themselves follow a direct, personal vision of Roussillon.
