PERSONAL TASTING NOTES

Fresh and juicy, with red berries, wild strawberry and a light floral touch. Bright and lively on the palate, with fine bubbles, refreshing acidity and a clean, dry finish

VINIFICATION METHOD

Made from 70% Grolleau and 30% Gamay from 20–40-year-old vines in Cheillé, planted on stony silt over flint clay. The grapes are hand-harvested and directly pressed, then fermented with indigenous yeasts. Malolactic fermentation takes place naturally before fermentation is stopped by racking and cooling. The wine then undergoes a second fermentation in bottle using the remaining natural sugars, and is later disgorged and capped. Residual sugar is below 0.4 g/L and total SO₂ below 10 mg/L.

MEET THE WINEMAKER

BARIOU-BODET

Jennifer Bariou and Thibaut Bodet started their domaine in 2015 in Azay-le-Rideau, in the heart of the Loire Valley. After gaining experience in wineries abroad, they settled in the region with around two and a half hectares and gradually expanded the estate to roughly eight hectares.

Today, their vineyards are spread between Cheillé, Lignières-de-Touraine and Azay-le-Rideau, giving them access to a broad mix of sites, vine ages and exposures.
